Chicken Burrito

Ingredients for Chicken Preparation:
Chicken fillets 3-4
Chili sauce 2 tbsp
Garlic powder 1 tsp
Black pepper powder 1 tsp
Mustard paste 1 tbsp
Red chili flakes 1 tbsp
Salt 1/2 tsp
Oil as required

Ingredients for Chicken Mixture:
Oil 3 tbsp
Onion (chopped) 1/2 cup
Tomato puree 1 cup
Salt 1 tsp
Black pepper powder 1 tsp
Prepared chicken
Jalapenos (chopped) as required

Ingredients for Salsa Preparation:
Onion (chopped) 1 cup
Tomato (chopped) 1 cup
Sweet corn 1 cup
Capsicum (chopped) 1 cup
Tomato ketchup 1/2 cup
Green coriander (chopped) 1/2 cup
Mixed herbs 1 tsp
Salt 1/2 tsp
Crushed black pepper 1 tsp
Vinegar 1 tbsp

Ingredients for Mexican Rice:
Oil 3 tbsp
Garlic (chopped) 1 tbsp
Tomato puree 1 cup
Red chili powder 1 tbsp
Salt 1 tbsp
Paprika powder 1 tbsp
Red chili flakes 1 tbsp
Water 4 cups
Soaked rice 2 cups

Ingredients for Assembling:

Directions for Chicken Preparation:
1. In a bowl add chicken fillets, chili sauce, garlic powder, black pepper powder, mustard paste, red chili flakes, salt and mix it well.
2. In a pan heat oil and place the marinated chicken fillets. Shallow fry each side for 1-2 mins or until 80% done. Now cut them into chunks and set aside.
Directions for Chicken Mixture Preparation:
3. In a pan heat oil and add onion. Cook for a minute. Now add tomato puree, salt, black pepper powder and cook for 1-2 mins.
4. Now add prepared chicken, jalapenos and cook for 1-2 mins. Set aside.
Directions for Salsa Preparation:
5. In a bowl add onion, tomato, sweet corn, capsicum, tomato ketchup, green coriander, mixed herbs, salt, crushed black pepper, vinegar and mix it well.
Directions for Mexican Rice Preparation:
6. In a pot heat oil and add garlic and cook for a minute. Add tomato puree, red chili powder, salt, paprika powder, red chili flakes and cook for a minute.
7. Add water and bring it to a simmer. Now add soaked rice and cook until 80% water dries out. Now cover and steam over low flame for 10-12 mins. Set aside.
Directions for Assembling:
8. Take a tortilla wrap, add a layer of Mexican rice, salsa and prepared chicken on it in the center.
9. Now wrap it well and toast it for 1-2 mins.
10. Your Chicken Burrito is ready.

Cooking time: 25-30 mins
