Chicken:
1 ½ lb chicken breast (skinless & boneless)
1 tsp. salt
½ ground black pepper
1 tsp garlic powder
1 egg
1/3 cup flour
5 tbsp cornstarch
Lemon Sauce:
½ cup water
¼ lemon juice
¾ cup sugar
lemon zest
½ tsp chili flakes
1 tsp soy sauce
Cornstarch Slurry:
1 tbsp. cornstarch
¼ cup of cold water
*Optional Ingredients
½ sesame seeds
Scallions (thinly sliced)
Cut chicken into cubes. Add salt, ground black pepper, garlic powder, and egg to the chicken. Mix well. Add flour and cornstarch to the seasoned chicken. Mix well and set aside. Lemon Sauce: Mix water, lemon juice, sugar, chili flakes, and soy sauce. Set aside. Cornstarch Slurry: Mix cornstarch and water until well combined.
Fry chicken over medium heat for about 5-7 minutes (flipping both sides). Do not overcook or meat will become rubbery. In another pan, simmer lemon sauce and bring to a boil. Add the cornstarch slurry and stir until sauce thickens. Add the cooked chicken. Mix until sauce coats the chicken. Add the sesame seeds and scallions. Serve.
