I’m back with another episode of “Cooking with Jay” I’ll be posting cooking videos to help people live a healthy lifestyle. Today’s recipe is One Pot Turkey Chili with Spicy Lime Sour Cream. I hope you enjoy!
One Pot Turkey Chili with Spicy Lime Sour Cream
Ingredients:
• 285g Ground Turkey
• 1 Bunch of Cilantro
• 1 Lime
• 1 Onion
• ½ bunch of Kale
• 2 Tomatoes
• 30ml Tomato Paste
• 540ml Black Beans
• 1Tbsp Chipotle powder
• 47g Sour Cream
• 8g Chili Powder with ½ tsp sea salt
Directions:
1 Peel, halve and small dice the onion. In a medium pot, heat a drizzle of oil on medium-high. Add the onions and cook stirring frequently, 1 to 2 minutes, until translucent. Add the ground turkey; season with ½ the spice blend and salt & pepper. Cook, breaking the meat apart with a spoon, 4 to 6 minutes, until browned and cooked through. Transfer to a bowl and reserve the pot.
2 While the turkey cooks, drain and rinse the beans; transfer ¼ of the beans to a bowl and mash them into a paste. Zest and juice the lime. Strip the kale leaves off the stem; roughly chop the leaves. Small dice the tomatoes. Roughly chop the cilantro leaves and stems.
3 In the reserved pot, heat a drizzle of oil on medium-high. Add the tomatoes and ½ the chipotle powder; season with salt & pepper. Cook, stirring frequently, 2 to 4 minutes, until the tomatoes have softened. Add the tomato paste and cook, stirring frequently, 1 to 2 minutes, until dark red. Add the cooked turkey, mashed beans and 2 cups of water; season with the remaining spice blend and salt & pepper. Bring to a boil; reduce to a simmer. Cook, stirring occasionally, 10 to 12 minutes, until the chili has thickened.
4 While the chili cooks, in a small bowl, combine the sour cream, ½ the lime juice, ½ the lime zest and as much of the remaining chipotle powder.
5 To the pot of chili, add the kale, remaining beans and as much of the remaining lime juice as you’d like. Stir to combine and season with salt & pepper to taste. Divide the finished chili between your bowls. Top the chili with the chipotle-lime sour cream and garnish with the cilantro and remaining lime zest. Enjoy!
