
Back when I started making Japanese curry, I didn’t make the whole pot spicy so I cut up lots of fresh hot Vietnamese chili peppers we grew in the garden. We grew jalepenos, scotch bonnets, Vietnamese hot chili peppers, “Or Hiem” which translate from Vietnamese to English: “Bird’s Eye chili” – that chili was stupidly spicy. I was addicted to just adding fresh chili peppers to almost all of my foods.
