Chicken in Black Pepper Sauce recipe:
### Ingredients
**For the Chicken Marination:**
– Chicken: 800g (thinly sliced)
– Egg: 1
– Black pepper: 1 tsp
– Red chili powder: 1 tsp
– Salt: 1 1/2 tsp
– Ginger & garlic paste: 1 1/2 tsp
– Corn flour: 4-5 tbsp
**For the Sauce:**
– Oil: for frying
– Green chilies: 3-4
– Whole red chilies (Kashmiri laal mirch): 4
– Garlic (chopped): 1 1/2 tsp
– Capsicum (medium, cubed): 1
– Onion (cubed): 1
– Vinegar: 1 1/2 tsp
– Oyster sauce: 2 tbsp
– Hot sauce: 1 1/2 tsp
– Sesame oil: 1 tsp
– Soy sauce: 1 1/2 tsp
– White pepper: 1 1/2 tbsp
– Black pepper: 1 1/2 tbsp
– Chicken powder: 1 tsp
– Salt: 1 tsp
– Sugar: 1 tsp
– Corn flour: 2-3 tbsp
– Spring onions: for garnish
– Water: 1-2 cups (or as needed for gravy)
### Instructions
1. **Marinate the Chicken:**
– In a bowl, combine the chicken with the egg, black pepper, red chili powder, salt, ginger & garlic paste, and corn flour. Mix well and let it rest for 15 minutes.
2. **Fry the Chicken:**
– Heat oil in a pan. Once hot, add the marinated chicken and cook for 2-3 minutes until slightly brown. The chicken should be cooked but not golden brown. Remove and drain on a paper towel.
3. **Prepare the Sauce:**
– In a pan, heat 2-3 tablespoons of oil. Add chopped garlic and sauté without changing its color.
– Add the cubed capsicum and onion, and sauté briefly. Add a splash of water to prevent the garlic from overcooking.
– Add the whole red chilies, white pepper, black pepper, chicken powder, salt, and sugar. Mix well and cook for a minute.
– Add vinegar, oyster sauce, hot sauce, sesame oil, and soy sauce. Add green chilies and cook for 1-2 minutes.
4. **Make the Gravy:**
– Add 1-2 cups of water (or your desired amount for gravy) and let it simmer.
– Add the fried chicken to the pan.
– In a small bowl, mix the corn flour with some water to make a slurry. Add this slurry to the pan, stirring continuously to avoid lumps. Cook for 2-3 minutes until the gravy thickens.
5. **Finish and Serve:**
– Turn off the heat and sprinkle spring onions on top.
– Serve the Chicken in Black Pepper Sauce with garlic rice or egg fried rice. Enjoy!
