

I've been growing hot peppers for the first time since March (indoors), starting with hungarian wax peppers (then poblanos and jalapenos).
All 3 Hungarian wax plants have produced quite a lot of peppers (30ish in total). But all the peppers are green, not yellow, and have been green for a while, never yellowing.
I've read online that Hungarian wax goes yellow then orange and finally red. But I've found one pepper which seems like it's directly going from green to orange. Is that normal?
I had hoped to harvest them when yellow, as I don't want them to be too hot, and from what I understood as they go orange then red, then get hotter and hotter.
I thought maybe I misunderstood, and harvested a green one and tasted it, but it didn't taste ripe
Any information on those types of peppers?
