THE perfect SNACC 😋
LOVE this dish. Super simple, low in carbs and calories and tastes like it came straight out of a fancy restaurant. Great for a meal, snack or party appetiser! ❤️

Recipe (Serves 2 – per serving 296 KCal with 30 G protein )
Ingredients
8 small snacking bell peppers, slit on one side and deseeded OR 4 regular bell peppers, slit into two and deseeded
200 g chicken breast, roughly cut OR 125 g paneer/tofu
Few sprays cooking oil
1 tbsp chopped onion
1 tbsp chopped garlic
1 tbsp chopped green chilli
1 tsp peri peri seasoning
1 tsp chilli flakes
1 tsp oregano/ranch seasoning
Salt and sugar to taste
1.5 tbsp cream cheese
1 tbsp grated cheese
2 tbsp skim milk
2 tbsp water

Method
1. Sauté garlic, onion and chilli in a few sprays of cooking oil.
2. Add in chicken, all the seasonings, and mix well.
3. Pour in the milk, and once the chicken begins to soak it up, shred it with two forks.
4. Cook it until the moisture dries up, then add in cream cheese and mix well.
5. Stuff this filling into the cleaned bell peppers.
6. Add them into a non stick frying pan with a few sprays of cooking oil.
7. Top with grated cheese, and once the base begins to brown, add a few tbsp of water, and cover and cook.
8. Serve hot! 😋
