If you find yourself in Queretaro you may see Indigenous women selling this delicious dish typical to the Amealco region of the state. It consists of a blue corn tostada, a bed of fresh cactus, stewed potatoes in very spicy salsa and finally topped with queso ranchero and cilantro.
