Mouthwatering Pepper Chicken Curry Recipe

Ingredients:
Pepper: 1½ tbsp (roasted and ground)
Full-fat plain yogurt: 1 cup
Salt: 1¾ tsp (divided)
Chicken: 1.2 kg, cut into small pieces
Cooking oil: 2 tbsp
Cardamom: 5 pods (green)
Cinnamon sticks: 3-4
Black cardamom: 1
Cloves: 4
Onion: 1 cup, thinly sliced
Green chilies: 4-5, slit
Garlic paste: 1 tbsp
Ginger paste: 1 tbsp
Cashew nuts: 2 tbsp
Ghee: 1 tbsp
Sugar: 1 tsp
Garam masala: ½ tsp
Powdered milk: 1 tbsp mixed with 2 tbsp water
Fresh coriander: 2 tbsp, chopped
Instructions:
Prepare Pepper Mixture:

In a pan, roast 1½ tbsp of pepper over low-medium heat until fragrant. Transfer to a mortar and pestle and grind well.
Marinate Chicken:

In a bowl, combine the ground pepper, 1 cup of yogurt, and 1½ tsp salt. Mix well.
Add the chicken pieces to the bowl, ensuring they are well coated. Set aside to marinate.
Prepare Onion Mixture:

Heat 2 tbsp of cooking oil in a pan. Add green cardamom, cinnamon sticks, black cardamom, and cloves.
Add sliced onions and ¼ tsp salt, sautéing until soft and translucent.
Add green chilies, a splash of water, garlic paste, and ginger paste. Sauté until fragrant.
Add cashew nuts and another splash of water, cover, and cook on low heat for 3 minutes.
Once done, transfer to a mixer and blend into a smooth paste.
Cook Chicken:

In the same pan, heat 1 tbsp of ghee. Add the onion paste and sauté briefly.
Add the marinated chicken and cook on medium-high heat for 3-5 minutes, stirring occasionally.
Cover and simmer on low heat for 35 minutes, stirring occasionally to prevent sticking.
Final Touches:

Once the chicken is cooked, stir in 1 tsp sugar, ½ tsp garam masala, and the powdered milk mixture.
Garnish with chopped coriander.
Serve:

Serve hot with rice, naan, or paratha.
