In my experience they don’t really freeze well. Better to dry them out, turn them into sauce or salsa, infused oil, etc…. Been drying peppers for weeks now myself. I generally dry them and grind them into powder but as I have enough of that I am starting to work through what else I want to make.

Freezing is a pretty terrible way of preserving peppers…
Dehydrating, canning, pickling, making into sauce, are all much better methods.

I only freeze peppers that will be used for hot sauce. other than that they get dried.

Freezing, and subsequently thawing, peppers causes the cell walls to rupture, resulting in a soft, mushy fruit. I actually prefer this for most of my hot sauce recipes, as they come out a lot smoother and the flavors seem to blend better. It’s much easier to chop and deseed, if you’re into that, before freezing. I clean them, remove the stem, cut in half, and remove the seeds (for certain peppers) before packing into a zip-lock freezer bag.
