Heres my attempt at Albondigas! As a Filipino that grew up eating all kinds of Mexican dishes, this is one of my favs!

I’ve been to Mexican restaurants in NC that doesn’t know what albondigas is! I’ve only had it in CA. I want some now!

Looks great! I’m always really fascinated by how different the dish can be prepared between regions of Mexico and even family customs. I’ve never seen it with corn and those peppers.
In my family, we make a paste using tomatillos, mint, and toasted bolillo, and mix it into the meat with rice and some spices. I have many friends that only add salt, pepper, and rice to the meat. I also had a friend who said their family boils a few guajillo chilis, blends them, and add them to the broth for color (which I adopted after learning about it).
Whatever the case, I am craving albóndigas 😋😋😋
