    I’m not a fan of the cheddar cheese or any other yellow cheese over Mexican food.

    But I use mozzarella most of the time for enchiladas, chilaquiles and quesadillas, so what ever you like I guess.

    All I can say is cheddar cheese belongs on all casseroles. Thank you for not putting any on enchiladas.
