Today I’m going to show you how to make my favorite super easy Tex-Mex SHREDDED BEEF ENCHILADAS, now let me tell you these are so easy all you need is a pressure cooker and 1 hour, this enchiladas I like to serve them as I go, the heat from the sauce and tortilla will melt the cheese but ofc you can always bake them all together, regardless it’s seriously the BEST! I promise you even if you are not a mazapán fan you will for sure enjoy it ❤️

Ingredients:
2 lbs beef I’m using pot roast
1 small onion;small diced
5 smashed garlic cloves
1 cup crushed tomatoes
2-3 chipotles in adobo sauce
2 tbsp chili powder
1 tbsp ancho powder
1 tbsp oregano2 tsp black pepper
1 tsp chipotle powder
1 tsp ground cumin
1 tsp coco powder
1 tsp ground cinnamon
Salt to taste
1/2 cup instant corn masa (Maseca)
For the enchiladas
Corn tortillas
Medium cheddar cheese
1 serving of love 💕

  2. Thanks! New fan here. I knew some of what you did before, like the short fry of tortillas to soften them and not baking the enchiladas to death, but I have been looking for a good enchilada sauce recipe for awhile. I don't have a pressure cooker, but I'll just do a long slow simmer Instead. I appreciate the proper way to make these!! 😊

    P.S. I love sliced black olives and sliced scallions on top…that's just me though lol.

  4. I just tried this tonight and wowzaaaa yall, please go easy on the chipotles ahaha use 2-3 😅i used almost the whole medium sized can. The chili powder also gives it a nice kick but yes take it easy on the spice level – my dad said it was a lil spicy

  5. Amazingly delicious!!! One variation I’ve grown to live is putting mine in the oven with the fan on to kind of “crisp” the tortilla edges before I sauce them. After saucing and cheesing them, back in the oven again until the cheese starts to “toast”. Just a preference I’ve developed that some would say over cooks them.
