Ingredients:
For Marination:
500g boneless chicken (cut into small cubes)
1 egg
2 tbsp cornflour
2 tbsp all-purpose flour
1 tsp red chili powder
Salt to taste
Oil for frying
For Sauce:
1 tbsp oil
1 tbsp ginger (finely chopped)
1 tbsp garlic (finely chopped)
2-3 green chilies (slit)
1 onion (cubed)
1 bell pepper (cubed, any color)
2-3 tbsp soy sauce
1 tbsp red chili sauce
2 tbsp tomato ketchup
1 tsp vinegar
1 tsp sugar
1 tsp black pepper
Salt to taste
Spring onions for garnish (chopped)
Instructions:
Marinate the Chicken:
In a bowl, add the chicken pieces, ginger-garlic paste, egg, cornflour, all-purpose flour, soy sauce, red chili powder, and salt.
Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.
Fry the Chicken:
Heat oil in a pan. Fry the marinated chicken pieces in batches until golden and crispy. Set aside.
Prepare the Sauce:
In a wok or large pan, heat 1 tbsp oil. Add chopped ginger, garlic, and green chilies, and sauté for a minute until fragrant.
Add the cubed onions and bell peppers. Stir-fry on high heat for 2-3 minutes (vegetables should remain crunchy).
Add soy sauce, red chili sauce, tomato ketchup, vinegar, sugar, and black pepper. Stir to combine.
Combine Chicken and Sauce:
Add the fried chicken pieces into the sauce. Toss everything together, making sure the chicken is well-coated with the sauce.
Adjust seasoning with salt and pepper.
Garnish and Serve:
Garnish with chopped spring onions.
Serve hot with fried rice or noodles!
