My wife makes a mean onion with habanero, I guess pickled, but with lime. The lime gets rid of the hot feeling just slightly and we eat that with “Pollo enchilado” perfect combo.

I live in New Zealand and I follow this sub – it makes me happy when I see something that I can actually make here to a reasonably authentic standard. This is one such dish, and we’re having it tonight. The cheese will be different here, but we can get corn tortillas and I pickle onions. On the downside, about 90% of the stuff posted here I can’t get the ingredients for. Still… I’m looking forward to this evening’s tacos, and it’s my daughter’s favourite.
Question about the cheese – is this a kind of cheese that’s easy to make at home?
