What kind of soup is this? I had it in rural Baja California Sur 2 years ago and it might have been the best thing I ever tasted.

    If this has hominy in it and shredded chicken, beef, or pork, then it’s pozole.

    That’s pozole. Flavored by rehydrating dried chilies and blending til smooth then straining out the seeds/skin

    So judging by the pic alone, I see no hominy but I see potatoes, onions and Cilantro.

    It could be a simple caldo, either chicken or beef, with a tomato stock. Caldo Tlalpeño could be an option too

    If it had grains it’s pozole if it was just beef it’s caldo de rez .

    OP, if none of these soups ring a bell with you, posole is called gallina pinta (painted hen) in the state of Sonora and typically has beans added to it.
    Did they give you red cabbage to mix in? If they did, it’s posole or gallina pinta. If they gave you lime wedges, cilantro, and diced onion but no cabbage, it was menudo. And you would recognize the tripe in menudo, which has a honeycomb texture on one side and can be chewy while also melting in your mouth.

    Looks like red pozole to me especially if it has hominy IMO. Could be menudo but I don’t see anything that looks like fatty meat or tripe.

    Friends hear me out, I think that’s Gallina Pinta. I’m from Baja California originally and this looks just like gallina pinta- def not caldo tlalpeño or menudo

    Looks like pozole. My mom still makes it every Christmas Eve and it’s the best soup ever.

    Pozole – beef, hominy

    Gallina pinta – beef, beans, hominy

    Birria or caldo de res – beef
