Healthy dinner ideas should always be easy dinner recipes. This unstuffed peppers skillet meal prep keeps it simple! 15 minute prep, 20 minute bake and naturally gluten free. This will be a new go to family favorite!

Ingredients
-1 lb Ground turkey
-1 T Olive oil
-1 Small onion
-2 Small bell peppers (choose your color)
– 1 T Italian seasoning
-Salt & pepper
-2 t Minced garlic
-15 oz Can Diced tomato
-1/2 C Jasmine rice
-1/2 C Low sodium chicken stock
-1/2 C Shredded cheddar cheese
-2 T Grated Parm

Instructions
-Preheat oven to 350
-Heat an oven safe pan to medium high heat (I used large cast iron skillet)
-Add turkey to pan, break into bits, cook until you do not see any pink.
-While turkey cooks chop onion and pepper
-Drain fat from turkey once it is cooked through and return to pan
-Add peppers and onion to pan, stir and simmer for 2-3 minutes
-Add garlic and seasoning, stir together
-Add diced tomato, stir together
-Add rice & broth, mix well
-Cover pan tightly with foil
-Bake for 20 minutes
-Top with cheese and recover
-Bake for 5 more minutes
