Fried Chicken Wings with Salt and Pepper Asian Style

The ingredients and preparation
• 1.25 lbs. Chicken Wings.
• Rinse well with water.
• Dry with paper towels.

Let’s Marinate The Chicken
• 3 Tsp Garlic Powder.
• 1 Tsp Onion Powder.
• ½ Tsp White Pepper.
• ½ Tsp Salt.
• 1 Tsp Sugar.
• 1 Tbsp Soy Sauce.
• 1/2 Tsp Dark Soy Sauce.
• 1 Tbsp Oyster Sauce.
• 1 Tbsp Shao Xing Cooking Wine.
• 1 Scrambled Egg.
• Mix Ingredients Well.
• Cover and chill for 8 hours in the refrigerator.

Let’s Prepare The Vegetables
• ½ Red bell pepper cubed.
• ½ Yellow bell pepper cubed.
• 6 Cloves of Garlic chopped.
• 1 ½ oz. Sliced Shallots.
• 2 Stalks Chopped Green Onion.
• 2 Red Thai Chili Peppers Sliced.

Let’s Prepare Dried Seasoning
• 1 Tsp Garlic salt with parsley.
• ½ Tsp White Pepper.
• ¼ Tsp Chicken Bouillon Powder.
• Mix Ingredients Well.
• Set to the side.

Let’s Batter The Marinated Chicken Wings
• 5 Tbsp of Corn Starch.
• 5 Tbsp of All Purpose Flour.
• Uncover the plastic after the wings have chilled for 8 hours.
• Roll and squeeze the chicken wings to coat nicely.

Let’s Deep Fry The Chicken Wings
• Canola oil medium temperature 380F
• Fry for 5 Minutes each batch.
• Rotate to cook evenly.
• Set on drying rack.
• Cook 2nd Batch of Chicken.
• Cook for 5 minutes.
• Set on drying rack, let rest for 15 minutes.

Let’s Fry The Chicken A Second Time
• Bring Temperature to 380F
• Fry for 3 minutes for extra crispy.
• Set on drying rack.
• Cook the second batch and fry for 3 minutes as well.
• Set on drying rack.

Let’s Finish The Final Cooking
• 2 Tbsp Avocado oil.
• 6 Cloves chopped garlic.
• 1 ½ oz. Sliced Shallots.
• White part of green onions.
• Cook until fragrant.
• Add the Sliced red and yellow peppers.
• Sliced Red Thai Chili Peppers.
• Cook until fragrant. Mix Ingredients Well.
• Add our chicken wings back to the pan.
• Add the dry seasoning a little bit at a time.
• Mix the chicken wings and ingredients well.
• Add the rest of the dry seasoning.
• Mix all well.
• Add green onions.
• Mix ingredients well.
• Ready to plate.
• Finish with our toppings from the pan.
• Final Topping Green Onions.
