Impulse purchased an ox tongue, wanna try making tacos de lengua – is the Rick Bayless recipe a good one to try?

I wanna try and get something as close to what it would be in Mexico as I can get, but I some times find Rick Bayless over simplifies things. Is the recipe I linked a good start, or not?
