MEXICAN STUFFED BELL PEPPERS!



Delicious lil stuffed peppers! There will be lots of filling leftover. Makes it easy to make stuffed pepper the next day or two. Also, the rice tastes delicious on it’s own, or can be served as a base for a rice bowl. DELICIOUS!

Ingredients
-1 lb ground meat (beef)
-2 tbsp cumin
-2 tbsp chilli powder
-2 tbsp coriander
-3 tbsp cilantro (diced)
-1/4 red onion (diced)
-1/2 yellow onions (1/4)
-2 scallions (diced)
-1 corn (grilled. Canned works too)
-4 cloves garlic (diced)
-1 lime (juice and zest)
-1/2 tomato (diced)
-1 can black beans (rinsed)
-4 bell peppers (cut in half)
-2 cups cooked rice (I used jasmine)
-1 serano chilli (diced, add more if you want it spicy)

Method:

a) cook 2 cups of white rice
b) prep all veggies

Beef and Beans:
1) add onions and garlic to a hot pan with 3 tbsp olive oil, season with salt and pepper and saute for ~2 minutes.
2) add cumin, coriander, chilli powder, and stir evenly to and coat with the olive oil. This will help bloom the spices ~1 minute
3) add black beans, salt and pepper, and stir, and then add about 1/4 cup of water (or beef stock), cover the lid and let cook for 5 minutes, until the water is absorb/evaporated.
4) remove the lid, the water should be absorbed or evaporated, if not, remove the lid and let it evaporate. Then, add ground beef, and more oil if needed, and break up ground beef. Season with salt and pepper (and more spices. I added 1 tbsp of cumin and chilli powder)
5) cook until beef is done

Filling:
In a mixing bowl, add white rice, beef and bean mixture, and all the veggies, and lime juice/zest. Mix everything thoroughly. Taste, and add salt and pepper to taste.

Bell Peppers
1) preheat oven to 350 deg F
2) Cut in half, through the stem. Remove white parts and seeds
3) brush the inside with olive oil and bake in oven for 5 minutes
(THESE CAN BE PREPPED AHEAD OF TIME, ready to be stuffed)
4) add filling to peppers, cover with cheese, bake in the oven at 350 for about 10 minutes. Switch to broil if needed, to get cheese extra bubbly!
5) Serve with your favourite hot sauce!
