👨‍🍳 Ingredients You’ll Need:

Lobster shells – 2 (from cooked lobsters)
Unsalted butter – 250 grams
Sliced garlic – 1 tbsp
Red chilli powder – 1 tsp
Juice of lime – 1
Chopped spring onions – 2
Chopped coriander – A few sprigs
Bird’s eye chilli – 1
Lobster:
Lobster meat, cut into chunks – 450 grams
Green chilli paste – 1 tsp
Ginger-garlic paste – 1 tsp
Turmeric powder – 1/3 tsp
Red chilli powder – 1/3 tsp
Salt – To taste
Black pepper – A pinch
Cornstarch – 1 tsp
Club soda – 1/2 cup
For Cooking:
Additional sliced spring onions – To taste
Additional sliced bird’s eye chilli – To taste
Extra sliced garlic – To taste
Lemon juice – To taste
Lemon zest – To taste
Freshly chopped spring onion greens – To taste
For Serving:
Baguette, cut in half – 1

Process:
• Make Lobster Butter: Boil the lobster shells in water in a vessel. Add the unsalted butter, sliced garlic, red chilli powder, lime juice, chopped spring onions, chopped coriander, and the whole bird’s eye chilli. Stir gently, cover, and let it simmer for about 15-20 minutes.
• Prepare Lobster Chunks: Combine the lobster chunks in a bowl with green chilli paste, ginger-garlic paste, turmeric, red chilli powder, salt, black pepper, cornstarch, and club soda. Mix well and let marinate for at least 30 minutes.
• Strain the Lobster Butter: After simmering, strain the lobster butter into a bowl, discarding the solids.
• Cook the Lobster: Heat some of the strained lobster butter in a pan. Add sliced spring onions, bird’s eye chilli, and sliced garlic. Toss until fragrant. Add the marinated lobster chunks and fry until they are cooked through. Squeeze in some lemon juice and sprinkle with lemon zest and salt to taste. Toss in freshly chopped spring onion greens.
• Serve: For serving, toss the baguette halves in a bit of lobster butter and plate alongside the lobster garlic butter.
