  1. It may be good, but nit as good as simmered for a few hours to let the flavors marry and have a honeymoon, not just a quick blind date lol

  2. Why not just brown the meat off and reduce until the grease disappears rather than sopping it out of the pan with paper towels? Fat is not our enemy, in fact it adds to the flavor of just such dishes as chili. We're way past the fat is our enemy era, just reduce.
