Chili Garlic Chicken – My Broken Fridge Meal



Simple, quick and easy chicken stir fry that delivers loads of flavour. Juicy chicken stir fried with garlic, dried chilies and umami seasoning, served with rice. It’s what I made when I ended up without a fridge for weeks!

About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.

Pai was born and raised in southern Thailand where she spent much of her “playtime” in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes.   1. Very smart recipe. But can you tell us what to do with the food in the bridge that about to go bad if the bridge is broken? Did you quickly throw everything in the freezer? Did you manage to save some ingredients?

  2. My oyster and soy sauce are in the fridge. The oyster sauce says to refrigerate. Are there some you don’t have to?

  3. OMG Pai. I just made this and it’s amazing (of course!) but I had my own “make do” moment when I realized that I didn’t actually have any chicken thighs left in either the fridge or the freezer (whoops). What I did have was… a bag of Costco frozen breaded chicken nuggets. Guess what? Still amazing! I did add a little chicken bouillon powder to the sauce to make up for not having the fond from cooking the chicken and at the suggestion of many commenters here, I opted for gochugaru and it was perfect. Definitely making it the right way next time, but this was a surprisingly great save.

  8. Ik there is salt in the different sauces but looking at a recipe which has not a single pinch of salt added is kinda weird.
