Must-try Lengua Estofada Recipe | Chef Tatung



This Lengua Estofada, with its Spanish roots, is one of my favorite dishes to cook because I know it’s always for a special occasion when I prepare it.

What makes this version even more special is the addition of Beaoliva Pitted Green Olives, an essential ingredient that not only adds color and flair but enhance the flavor to a whole new level.

If you’re looking for something unique and packed with flavor, I highly recommend giving this Lengua Estofada recipe a try!

Ingredients:

Boiling
– 1 whole Beef tongue
– 4 pcs. Bay leaves
– 1 Tbsp. Black Pepper
– 1 pc. Carrot, chopped
– 1 stalk Celery leaves
– 1 Tbsp. Salt

Marinate
– 1/4 cup Soy sauce
– 1/4 cup Calamansi juice

Saute
– 1 pc. White onion, minced
– 5 cloves Garlic, minced
– 1/4 cup Butter
– 1/4 cup Flour
– 2 pcs. Bay leaves
– 1 can Tomato, diced
– 1 Tbsp. Sugar
– 1/2 cup White wine (optional)
– 2 cups of stock
– 1 cup Whole mushrooms
– 1 Tbsp. Soy sauce
– 1/2 cup Pitted green olives
– 1 pc. Red bell pepper, julienned
Season with salt & pepper

Garnish
Parsley, chopped

  1. Chef, if we don't use a pressure cooker, how long can we boil the tongue? I ask because when I boil this, I still need a knife to slice away the thick layer.

  3. Hi Chef pwede po yong isang version naman po ng lengua, yong parang gravy naman ang sauce. Not sure po kung Lengua in white mushroom sauce po yata tawag don. Thanks po.
