  1. ? Out of all the canning and pickling you do… have you ever made a southern favorite “chow chow”…… I’d be willing to be Matt likes it on Pintos and cornbread 😬…. Please share if you have ever made any 👍

  3. Never done that burp method on anything, we just always water bath ours and put 'em on the shelf.
    A good vegetable combination I've found is cauliflower, radishes, carrots, onions, garlic, a few kinds of peppers and whatever kind of spices you like.
    Have on occasion used bell peppers that had been cleaned out and stuffed them with the other veggies to make a portion size, it keeps some folks from eating the whole jar, some folks will eat a lot more though.
    I like tomatoes pickled with thin onions and a few hot peppers.
    My daddy-in-law used to make tons of pickled peppers every year, banana peppers with some real hot ones mixed in.
    One early spring he unloaded a bunch on us to make room for more, and my son was just barely over a year old, and as soon as we started eating on them peppers he hollered "bite".
    Didn't know if I should give him a bite or not, but my husband went ahead and done it, that boy took a bite, chewed it, swallowed it, sucked in some air behind it to cool his mouth and took another bite.
    Wasn't so freaked out about him eating off our plates anymore after we'd done peppered everything up after that.
    When he got a little older, he'd eat the whole jar before you could stop him.
    We was at my in-laws' house one time fixing to eat, and some kinda news thing come on that was important and we all run to the den to watch, well my near two year old so had done climbed up on the table and eat almost half a jar of them pickled peppers before we got back in there, and still eat a full meal afterwards.
    If it's hot, I'm probably gonna eat it, so the boy got it honest.
    Even black pepper ain't got a chance to last around me.
    I'll put so much black pepper on anything that you can't even tell what's under it when I get done.
    Another spicy habit I've got is mixing horseradish in salad dressings and dipping sauces, though I've been known to add too much for other folks, so I do try to take it easy when fixing it for others.

  4. Tipper – those do look wonderful. I do small batches of pickled items. Love pickled green tomatoes, my mom made them every year. She cut them into quarters. I like to do the small cherry size and poke a hole through from the top to bottom with a toothpick to let the brine in. I like to add pickling spice to some but often just add whole coriander seeds. To peel lots of garlic, separate into cloves, put into jar with lid and shake vigorously.

  6. My Moma loved the pickled cauliflower, carrots, onions and peppers. She just loved peppers. She would eat jalapeños with a bologna sandwich and pinto beans. I miss her so much.

  8. I started asking you about storing until I listen to the whole video. I’m excited to go to the farmers market today because I don’t have enough peppers. I’m going to do a small batch just to try it and keep them in the refrigerator. I hope I can get my husband to learn to love pickled peppers.

  9. We have something vinegar-y or pickled at every meal so as to keep our digestive system's acidity up. Based on my research and hearing from medical personnel, heartburn and "acid stomach" can be caused by not enough acidity in your digestive system, especially as one ages. It sounds counter-intuitive, but they say that your body tries to produce more acid to make up for the insufficiency/imbalance; that's what causes the heartburn. So, they suggested taking a swig of vinegar. If your "stomach" hurts for a long while, you might have an ulcer. If it's a temporary, brief discomfort (if any), then you probably need to have MORE acid in your diet. I was able to keep off antiacids/Prilosec once I've started cooking with lots of vinegar and we have something pickled with every meal.

  10. Hey Tipper! If I do not have weights, what do I use? Also, can I use one of those glass jars that has a hinged lid and the rubber seal around the mouth of the jar? Thanks!

  11. Oh tipper I am so glad I found this video of pickling Peppers. My Dom & Dad always pickled the Cyanne Peppers but my Dad would put green tomatoes in with his hot peppers and I just loved them! They would just use Vinegar, mustard seed and garlic. Surprizeingly the tomatoes were not that hot. I just gathered up my last small green tomatoes, no peppers but my husband is going to the grocery store to get me different organic peppers! I can't wait, it will just take to me back when I was a child with my Mom & Dad! Thank you for sharing!❤

  13. Tipper I like to put jalapeño peppers in my Pickles. Just a few slices, it gives them a zing instead of the peppercorns that alot of recipes I've read.

  14. Beyond Celebrating Appalachia is also the celebration of an annual harvest Ms. Tipper! Have been considering venturing into saving some of the excess green tomatoes that always seem to be a part of the rush to beat the first frost of the year.   15. After a couple weeks of letting my jars of pickled peppers sit they taste delicious. I don’t even like hot peppers, but these were amazing.

    I did mix up my own variation and added 1/ 4th cup of sugar and some pickling spices, celery, mustard, and dill. I also added onion, chopped cabbage, etc.. They are awesome.

    If I get a chance to make any more, I would like to add some cauliflower, and carrots with the mix.

    Okra is on my list of things to grow next year. I tried it a couple times, but I want to grow more and take a little bit more seriously.

  16. Hi Tipper, thank you for this video. I’m definitely going to try to pickle peppers next year. I’m also going to try to over winter pepper plants this fall. I’ve never done it but I watch a video that says you can do it and get a really good jump start the following Spring on pepper production. The video I watched also said you could do this in following years to come as well! The YouTube channel I watched was from, “Next Level Gardening” and the video was titled, “Overwintering Peppers- Grow this year’s peppers again next year”. This will be a game changer if it truly works. Nothing ventured, nothing gained, right 😊 Anyway, I wanted to thank you for your wonderful videos and also to share what I saw about the pepper plants.

  17. Hi Tipper, are your green tomatoes the ones that didn't fully ripen but it's the end of the season and you're pulling out your plants? If they are really little, hard and green will they taste good preserved.

  18. My recipe is vinegar and just like you said. Put the peppers either whole or cut into rings in prepared jars. Bring however much vinegar you need to a boil, then pour it in the h
    jars. That's the way my husband likes them and how his Papaw did it.

  22. I sent this on to my friend that pickles cucumbers, I’m hoping she takes the hint and tries it. That vinegar juice would have to be great on some Pinto Beans or Collards (my favorite). These look like a garden in a jar.

  23. Just picked a huge birthday bag of peppers and came back to this video tonight.. got a huge amount of Tabasco peppers so I’m gonna try to ferment for the first time and make hot sauce! Thank you for your wisdom and recipes! Can’t wait to try these peppers!

  25. My Mom and Granny would can pepper green beans, green tomatoes, and the most wonderful corn relish. I miss those yummy glasses of delicious.
