Ingredients:
– Chicken thighs or breast (boneless, skinless): 500g, cut into bite-sized pieces
– Cornstarch: 2 tbsp
– Soy sauce: 3 tbsp (divided)
– Oyster sauce: 2 tbsp
– Dark soy sauce: 1 tsp
– Ground black pepper: 2 tsp (adjust to taste)
– Garlic: 3 cloves, minced
– Ginger: 1 tsp, minced
– Onion: 1 medium, sliced
– Green and red bell peppers: 1 cup, sliced
– Spring onion: 2 stalks, chopped
– Chicken broth: 1/4 cup
– Vegetable oil: 2 tbsp
For the Marinade:
Soy sauce: 1 tbsp
Cornstarch: 1 tbsp
Ground black pepper: 1 tsp

Amazing! I don' t eat oysters, so I can't use oyster sauce. I substituted hoisin sauce mixed with some fish sauce for the oyster sauce. And didn't add any sugar since the hoisin sauce already has a sweet taste.

Nice meal Rik, I like stir fry’s, and Chinese taste, went to an Uyghur restaurant very good, and interesting, sort of Turkey comes to China, some of the dish’s like a samsa( lamb stuffed pastry) and kababs were very Turkey like, then the stir fry’s had a definite Chinese taste, I loved the Pearl noodle dish, a thick noodle cut into real short pieces,and beef and vegetables diced into the same size pieces, I found using a spoon to eat was the easiest way. They only supplied chopsticks, or a spoon. I also enjoyed the lamb kidney kababs,a little overcooked for my taste, but so tasty I didn’t really care about that.😊

Since my partner died in April am usually cooking for one so because peppers are so expensive here in N Z until after Christmas and I only want 1/4 I buy snap frozen halves they cook up beautifully and stay lovely and crisp😊
And quicker and fresher than you can get it from the takeaway😅😅

Excellent! I like my pepper chicken well glazed as well and your recipe does not hold back on the veggies like restaurants tend to do. Being a pepper freak, I tend to use a courser grind in the sauce; but, that is just the “make it the way you like it” as you always emphasize along with a dash of sesame seeds. Well done, Rik!
