Ingredients:

For the Chicken:
– Chicken drumsticks – 8 pieces
– Sesame oil – A drizzle

For the Stir-Fry:
– Vegetable oil – 2 tablespoons
– Garlic – 3 cloves, finely minced
– Green bell pepper – 1/2, finely sliced
– Spring onions – 2, finely sliced
– Chinese Salt and Pepper Chili Seasoning – 1-2 teaspoons, or to taste
– Red chilli – 1-2, finely sliced (optional, adjust for heat preference)

For the Chinese Salt and Pepper Chili Seasoning:
– Sea salt – 2 tablespoons (or 1 ½ tablespoons table salt)
– Sichuan peppercorns – 1 tablespoon (or substitute with black pepper)
– White pepper powder – 1 tablespoon
– Chili flakes – 1 tablespoon
– Garlic powder – 1 teaspoon
– Onion powder – 1 teaspoon
– Five-spice powder – 1/2 teaspoon (optional, for depth)
– Sugar – 1/2 teaspoon (optional, balances the heat)
– MSG – 1 teaspoon (optional)
– Chicken bouillon powder – 1 teaspoon (e.g., Knorr)
mix altogether.

  1. I prefer chicken thighs, and maybe some soy sauce, and some baby sweetcorn and mange tout or french beans for crunch. But a good idea for a quick meal.

You told me the other day that we all have different cultures and that's why our cusines differ, but the Chinese have a much more different culture than us Basques and yet, with minor differences, they cook much like we do (at least in your videos): lots of garlic and veggies (peppers are also very popular over here) with the meat. I myself cook more or less that way… just that somewhat less pretty and with olive oli instead of sesame.

  9. The last time I baked chicken drumsticks, they came out with an odd mushy texture. I usually stick with thighs.
