SINGLE SERVING SLOW COOKER RECIPES! CROCKPOT MEALS FOR ONE!



TIme to break out the slow cooker! I love my crock pot, not only for my family but for when I’m cooking just one meal for myself. Today I tried out 4 recipes that make cooking for one super simple!

Recipe amounts:

Creamy Chicken Soup:
2 chicken tenders (salt, pepper, smoked paprika)
1 can cream of chicken soup
1/4 cups spinach
1/4 cup frozen sliced carrots
1/4 cup frozen edamame
1 TBS minced garlic
crackers to top
** Cook on low 4-5 hours, high 3-4 hours

Corn Casserole
1 cup corn
1 cup creamed corn
1/2 cup jiffy corn bread mix
1/4 cup sour cream
salt & pepper to taste
1/4 cup cheddar
1 TBS melted butter
** Cook high 4 hours

Turkey Meatloaf:
1/2 lb ground turkey
1 egg
1/4 cup bread crumbs
1 tsp mustard powder
1 tsp oregano
1 tsp basil
1 tsp salt
1 tsp soy sauce
dash pepper
1-2 TBS bbq sauce
** Cook low 3.5 hours

Classic Pot Roast:
1/3 lb chuck roast
3 small potatoes
5 baby carrots
1/2 cup liquid
1 tsp oregano
1 tsp basil
2 tsp rosemary
s & p to taste
** Cook low 6 hours

I'm confused – why would you go to the effort of making a single meal for one – in a crock pot when you can easily make several meals at once – put in individualized containers and then you don't have anything to clean up – it's ready to go whenever you want? (Save on electric too!) The recipes look good!!

  2. I bought that exact same mini crockpot from Amazon and I love it… My first dish it was pumpkin pudding. Also I’ve made a pot roast in it but I used dill to season it and when it was done, I put sour cream on it…it was excellent. Yes, more meals for one or two would be great. (I’m actually gifting one of these to my little sister for Christmas, but hers is decorated with minions all over it which she loves.)

  3. Love my old crockpot. I think I've had four different ones over the years, and I'm now 70. The last two were purchased at thrift stores. I do live alone as a senior now and have one crockpot left. Not sure I'd buy a cooker just for one, since I love making a pot of chili or several other casserole type things and freezing the leftovers. (One of my smartest purchases has been a small box freezer, and I think I only paid $139 for it a couple years ago). Re the old crockpots, they can run hotter and can crack. I thank God I was home when I heard a loud crack, and sure enough, it was my crockpot that I had plugged in about a half hour prior; it cracked into two big pieces. I was able to rescue my ingredients and of course had to pitch the pot. I also love using a crockpot for desserts like hot fudge cake or chunky applesauce from the Fix It and Forget It Cookbook. You can probably hit your library, local thrift stores or online at Abebooks for many of these.

  4. First time visit to your channel. I am a widow and older and have that little crockpot. There are wonderful cookbooks for these mini crockpot cookers too. I recently made split pea soup that was delicious.

  9. I love single serving dishes all the time. It's just me. I love my 2 qt crock pot for soups & stews.

  10. Thanks for these recipes…more single serving recipes would be great..or just other recipes as well as I could freeze the left overs
