►2 large (1 1/2 lbs) boneless skinless chicken breasts

►2 Tbsp lime juice
►1 tsp ground chili powder
►1 tsp ground cumin
►1 tsp paprika
►1 tsp onion powder
►1 tsp garlic powder
►1 tsp fine sea salt, plus more to taste
►1/2 tsp ground black pepper
►3 Bell Peppers: Red, Yellow, and Green sliced into 1/4” thick slices
►1 medium onion, thinly sliced

TO SERVE:
►Lime Wedges, to serve
►Cilantro, to garnish
►8 flour tortillas, warmed, to serve
►Sour Cream, Salsa, Guacamole, or sliced avocado
►Shredded cheddar cheese, Monterey Jack, or Mexican Cheese

  2. To people who end up with overcooked chicken, an option is to sauté on high heat for color for a few minutes and then transfer the chicken to the oven for a few minutes until the thermometer shows a safe temperature.

    It can be tempting to cut the chicken into smaller pieces and keep sautéing instead of using your oven, but you will loose moisture this way.

  4. Pro tip: if you have a gas burner stove top, turn one eye on while you cut your onions next to it. The flame will consume the acid released by the onions, and you won't get teary-eyed!
