THINGS YOUāLL NEED:
2 tablespoon vegetable oil
1.5 pounds boneless short ribs cut into bite-sized pieces (about 1-inch cubes)
Salt and pepper to taste
1 large onion chopped
2 jalapeno peppers chopped (use serranos for hotter, or more to taste)
6 cloves garlic chopped (or more to taste)
1 pound Mexican chorizo
1 cup beef stock
3 15- ounce cans fire roasted tomatoes
1 15- ounce can black beans drained
1 15- ounce can red kidney beans drained
1 tablespoon Worcestershire sauce or to taste
2 tablespoons chili powder blend Iām using a hot New Mexican blend
1 teaspoon Mexican oregano
1 teaspoon cumin
Hot sauce to taste
2 tablespoons corn meal optional, for thickening ā or use crushed or torn corn tortillas

APCO we get here in Dallas is excellent Chorizo Apco pork chorizo sausage is made from a recipe that's over 100 years old. Oh yes please do add beer. That with some Mexican Cornbread Yummy Yummy. Lose the beans, and tomatoes, use Mexican chilies to make your red sauce, far better flavors and not as much acidity, donāt forget to add the non sweet chocolate to provide that extra depth of flavor and richness, a touch of Mexican cinnamon for the back notes!

I.ve never thought to use chorizo in chili. I'll have to try this. BTW, bacon is an awesome addition to a beef based chili. Add in 4 oz. including the fat to every pound of beef and maybe even a bit more depending on your preference. I cant wait to see if the chorizo is even better.

Ive never heard of chorizo being used in this manner, but man, it sounds fantastic! Would love to try it! How can I get that recipe?
Love it. Close to how I used to make chili, I didn't add chorizo but will give it a shot. I always used beef short ribs when I could get them. I would put the short ribs on the top rack when I was smoking chicken and then overnight in the fridge for the chili the next day. The smoking adds another layer.
Little bit of grated cheddar in a bowl, chilli on top then top one half of the bowl with tortilla chips, Guacamole and a little more cheddar.
