Ingredients:
1 Tbsp oil
1 medium yellow onion
1-2 jalapeño
2 cloves garlic
1 tsp oregano
1 tsp cumin
3 boneless skinless chicken breasts (roasted ahead of time) or 1 rotisserie chicken shredded
5 cups chicken broth
2 cans roasted green chilis
2 -3 cans white beans, drained, rinsed (one can smashed up)
2 cups frozen corn
Salt and black pepper to taste
1 cup sour cream or one block of cream cheese (softened)

That looks absolutely wonderful Ms. Jen. I made a big pot of Chicken chili years ago and I messed up by adding the chicken too early and well, the shredded bits just made it very unappealing. So of course, I decided then add a few more ingredients and it suddenly become Brunswick Stew. Then everybody loved it. LOL
