Red Pepper Eggs & Shoestring Hashbrowns



Simple breakfast’s are the best especially when you have a bustling home with hungry boys. This is a sure fire win for those picky kids because the hash browns alone will get their attention. I would recommend some wilted spinach with a little olive oil and lemon for those seeking a healthy addition, but all-in-all this is a great breakfast for those on a time crunch, but want something homemade. 1 medium Yukon gold potato
3-4 tbsp butter
1 tbsp avocado oil
2 tsp paprika
2 tsp chili powder (add 1 tsp cayenne for extra spice)
1 tsp dried or fresh chopped rosemary
2 whole eggs
salt & pepper to taste

  3. Very nice recipe & looks delicious, reminds me of bird nest soup that most folks don't know what it is & it is not for some folks as they will think it is gross , but I like it. Folks can Google bird's nest soup to see What the product is & how to prepare .

  5. Looks delicious! I’ve been eating a lot more eggs recently, so I’m always looking for new things to try. That paprika/chili powder butter looks amazing — I can practically smell it coming through my screen! I was just thinking about whipping up an omelet , but a couple of fried eggs with runny yolks would make for a nice change. No potatoes in the house, though…
