Throw a bit of cheese a bit at a time when you're putting it in a bowl and then a bit on top, do it when it's hot or before you reheat.
Personally I like a shredded cheese (you can also pull it apart if it's a square), type to your liking, not too much so it doesn't melt into a large piece inside. SERVE yourself a bowl of salted tortilla chips. Mission brand or the like.
