Dutch Oven Bean Chili (vegan & gluten free)

INGREDIENTS:
1 onion
3-4 garlic cloves
5 mushrooms
2 handfuls mixed peppers
2 cans beans*
1 can tomatoes
1 can corn
2 tbsp olive oil
2 tbsp chili powder*
1 teaspoon cumin

INSTRUCTIONS
1. preheat Dutch oven
2. roughly chop veggies
3. pour generous amount of olive oil in the dutch oven
4. add chopped veggies and cook until soft
5. add canned goods*
6. mix in rice and seasoning
7. cover and let cook until rice is done (cook time will depend on temperature of the oven)
8. stir the chili periodically and add water as needed
9. remove chili once rice is cooked through and let cool
10. add in avocado to personal serving if a creamier chili is desired

* any type of canned beans can be used (i just pulled out whatever was in my cabinet)
* measure chili powder to personal taste
*drain canned goods before adding to chili if you have a sensitive stomach- I find it reduces belly gas 🙂
