BEEF ‘N CHEESE BAR-B-QUE
2Tbsp butter (.25c)
1/4c minced onion (.17c)
3/4lb ground beef ($3.47)
2Tbsp flour (.02c)
1Tbsp sugar (.04c)
1/8tsp ground cloves (.02c)
1/4tsp dry mustard (.03c)
dash of pepper (.01c)
1Tbsp Worcestershire sauce (.06c)
2Tbsp water
1c shredded cheddar cheese ($1.12)
4 sandwich buns, buttered and toasted (.73c)

In skillet melt butter. Add onion and ground beef; sauté until onions are tender and beef is browned. Stir in flour, sugar, cloves, mustard and pepper; add Worcestershire sauce, water and cheese. Heat stirring constantly, until mixture is slightly thickened and cheese is melted. Spoon mixture onto hot, buttered buns and serve immediately. Makes 4 servings, $1.48 per serving.

TUNA AU GRATIN
1 – 9oz can tuna ($1.76)
1/2c cottage cheese (.49c)
5 slices bread, cut into cubes (.35c)
2Tbsp butter (.25c)
3Tbsp flour (.03c)
1tsp paprika (.04c)
1 1/2c milk (.30c)
1/2c shredded cheddar cheese (.56c)
2Tbsp butter, melted (.25c)

Combine tuna, cottage cheese and half of bread cubes, reserving the remaining cubes for topping. Spread tuna mixture in bottom of 1 1/4qt baking dish or 4 individual 1 cup casseroles. In saucepan melt butter; blend in flour and paprika to form a smooth paste. Add milk; heat, stirring constantly, until mixture thickens. Add cheese; continue heating stirring constantly, until cheese melts. Pour sauce over tuna mixture; top with reserved bread cubes. Pour melted butter over bread. Bake at 350 for 25 to 30 minutes. Makes 4 servings, $1.01 per serving

SPAGHETTI BAKE
2Tbsp butter (.25c)
1/4c minced onion (.17c)
1/2lb ground beef ($2.32)
1/2tsp salt (.01c)
dash of pepper (.01c)
1/4tsp basil (.03c)
1/8tsp garlic powder (.01c)
8oz tomato sauce (.48c)
4oz spaghetti (.25c)
1c cottage cheese (.98c)

In saucepan melt butter. Add onion and ground beef; sauté until onion is tender and meat is browned. Stir in salt, pepper, basil, garlic powder and tomato sauce. Cook spaghetti according to package directions; drain and combine with cottage cheese. Place half of spaghetti in a 1 quart casserole; Top with half of meat sauce. Repeat. Bake at 350 for 25 to 30 mins. Makes 4 servings, $1.13 per serving.

  1. Extra thought with the butter, in addition to just a little extra flavor punch (everything is better with butter) if using salted butter, you get a small amount of salt that might be helpful where you said there is no salt add.

  2. people in youtube comments kept bringing up Queen Abundance Secrets by alex lane, and i just ignored it for weeks. i figured it was just another trendy self-help thing. but the more i saw people saying how much it helped them, the more i got curious. when i finally gave it a shot, i could see why. it’s simple but real, and it made me rethink how i go after the things i want. i’m not saying it’ll work for everyone, but it made a difference for me.

  3. I’m not sure where you live but I’m from North Carolina and I’ve never heard of beef BBQ or cream chicken sandwiches. BBQ here is specifically pork, either whole hog (eastern) or pork shoulder(western).

  4. Although I like cottage cheese in Lasagne, I really have taste/texture issues with cottage cheese. How much do you taste it in the Tuna Au Gratin, Anna?

    I was in the hospital recently and they had smooth cottage cheese. The texture is like yogurt. and like yogurt, it came as plain or flavoured… still a nope for me, lol

  7. Anna, I use my toaster, using the bagel setting, to toast my hamburger buns or for toasting multiple buns, use the toaster oven without a pan. Saves messing up additional dishes. Toasting the buns definitely makes a difference, particularly for holding up when adding hot food to them. Thanks for another great video.

It veers from your theme but would you create or discuss what you remember of those snack stand barbecue and creamed chicken sandwiches in a future cooking or Q&A video? Seeing you carefully follow vintage recipes reminds me of our local newspaper reprints of their vintage homemaker recipes weekly ("Dorothy Dean in the Spokesman Review") and the scant amounts of seasoning used back then. Literally a drop of hot sauce, a quarter-teaspoon of an herb… Makes me think of the movie 'Pleasantville' and imagining food must have been so bland then. I love that you always offer advice on how to improve those vintage recipes, it becomes the best of both worlds.

  11. I was born in 1961 and never had dishes like those. I had traditional spaghetti/lasagna, tuna noodle casserole and sloppy joes. The tuna dish sounds good because I like tuna melts. I also really like creamed tuna on toast. Such an easy hot meal. Your channel name is very clever. 😊

  14. I'm curious of your take on the cream chicken sandwich. I'm in NW Ohio and my understanding is that the cream or (as we tend to call it) the hot chicken sandwich is very specific to Ohio and that not all parts of the state are familiar with it. I've seen lots of varying recipes on how it's made, from using potato chips, to ritz crackers, to Stove Top stuffing mix. Do you have a particular recipe that you use or prefer?

  16. Most people use mild paprika. When cooking anything besides deviled eggs I use a good quality smoked paprika. And that has a good flavor to it. A lot of people don’t know the difference.

  18. I must say, i really love your food adventure side its refreshing and bringing back all kinds of things. Here is one of moms recipes that my brother and i cant find a recipe for mom called it ' bean dish ' pan fry ground beef n onion add garlic powder if you want, brown that add Van de Camp pork n beans 1 can, add 1 can brown sugar baked beans .. if you like onions add more with 2 tbl ketchup 1 tea mustard mux well … Serve over bread like open faced sandwich. So good for my brother and me … Loved it growing up.

  19. Yes. You must toast the bun. Yes. Buy good Hungarian sweet paprika. Grew up with my mom making laz with cottage cheese. History of laz is that because of the cheese and that you needed an oven, it was a dish only for rich people. Guess it still is. Hi from chilly Oregon.

  20. In my years of cooking in food service I learned to always cook onions alone first then add the meat etc. The onions release sulfur and alone it releases and leaves. When added with other ingredients the sulfur can be absorbed into those ingredients. True or false it sounds good

  22. Definitely pass on tuna dishes. I got violently ill when I was forced to eat fish or seafood as a child. Don't know if my reaction counts as an allergy, but I always throw up. Even as an adult, fish oil capsules make me throw up. Thankfully, i live chicken, turkey, beef, and pork.

  24. So, that creamed chicken sandwich you mentioned in the intro sounds delicious. I live in Calgary and have never heard of it. I googled it and found two versions. One with Ritz crackers and one with stovetop stuffing. Which version do you like? Thanks 😊

  25. The spaghetti Lasagna was excellent. I doubled the ingredients, and like you said you thought you would do next time, I put shredded mozzarella on top.

    Learned a trick a while back, to put a thin layer of sauce on the bottom, and that prevents it from sticking. With food prices sky high this meets the criteria of a good volume comfort food at a low price. 😊😋

  28. Hi Anna! Oh my gracious, that beef and cheese BBQ sandwich looks delicious! I want to give it a try. I absolutely LOVE that strawberry dish, my kitchen is done up with strawberry decor, so Im super excited to see that plate. lol Spaghetti Bake or pasta bake is something I make often, It's sucha great way to stretch a meal. I have never tried it with cottage cheese though, I am intrigued!
