Ingredients
2 cups shredded or diced cooked rotisserie chicken
2- tablespoons olive oil
1- large onion, diced
3- cloves garlic, minced
1- can of white beans (such as cannellini or kidney beans)
Few fresh chopped green chili (adjust for heat preference)
3 cups chicken broth
2 -teaspoons ground cumin
1 – teaspoon ground coriander
1- teaspoon dried thyme
1 cup frozen or canned corn kernels
2 tsp lime juice
1 cup cream
1/4 cup Chopped cilantro

1- bell pepper, diced (any color)
1- carrot, diced
1 cup corn kernels (fresh or frozen)
1- can (15 oz) chickpeas, drained and rinsed.
1- can (15 oz) kidney beans, drained and rinsed
1/2 cup ketchup
1-can (28 oz) crushed tomatoes
3 cups vegetable broth
1- tablespoon of chili powder
1- tablespoon cumin
1- teaspoon of smoked paprika
1- teaspoon thyme
