Chili is one of the best winter foods… and as you can see I NEED IT TODAY! I have been making my chili this way for years, but I’ve never taken the time to make smoked chili on my pellet grill. SO today I’m going to do an Over The Top Chili on my all new Traeger Woodridge Pellet Grill! Lets DIVE IN!
Lets get this out of the way now… The best part about cooking your own food IS MAKING IT THE WAY THAT YOU WANT! YES THIS CHILI HAS BEANS, BECAUSE THATS HOW I LIKE IT! 😂
Now that we have that out of the way… Time for the ingredients for this easy smoked chili recipe:
1lb of ground beef (I chose 90/10)
1lb chorizo
1 medium sweet onion
1 green bell pepper
1 red bell pepper
1 can dark red kidney beans
1 can white kidney beans
1 can mild green chilies
1 can fire roasted diced tomatoes
1 can tomato sauce
32oz beef broth (Recipe needs 2.5 cups, but you may want or need more)
2 cloves minced garlic
1 packet Kinders Mild Chili Seasoning (Pick whatever you’d like)

I've made OTT chili a couple times now and I'm definitely impressed with it. Nice and smoky. Great recipe. I'll have to give it a try. For what it's worth, I would recommend trying Brooks chili beans. That's what I use in my regular chili and have always liked them. Not sure if they're available in your area but they're good. Chili without beans is just stew. 😉

Very nicely done! As a Texan, we do usually make the beans as side, and folks can add them if they want. Another great addition is to add a couple tablespoons of Masa to the chili for the last 25-30 minutes. Helps thicken a little bit, and adds a noticeable boost in flavor/complexity.

Herdez makes a Salsa Ranchera sauce that is perfect for chili. I add it to the meat once it's browned before adding the rest of the ingredients. Now I cant make chili without, its just not the same.
