Post Bariatric Surgery Recipe: Tomato Red Pepper Soup



Try this simple tomato 🍅 and red pepper soup recipe if you’re looking for something warm and delicious to eat during the liquid phase of your post-bariatric surgery diet.

Ingredients:

→ 2 cans of crushed or stewed tomatoes 🥫
→ 1 can of roasted red peppers
→ 1 or 2 chopped onions, depending on size 🧅
→ A few cloves of garlic 🧄
→ A handful of basil leaves, chopped 🌿
→ 1 tsp of thyme
→ 1 tsp of paprika
→ 16 oz of cottage cheese
→ 32 oz of chicken broth to thin soup as needed

In a large pot over medium heat, add some olive oil, garlic, and onion.

Cook the garlic and onion until the onions are soft.

Add in the red peppers and crushed tomatoes. Stir.

Add in the chopped basil leaves, the thyme, and the paprika. Stir.

Bring to a boil, then drop to low heat, cover and simmer for 20 minutes, stirring occasionally.

Remove the soup from the heat and transfer to a blender. Add the cottage cheese.

Blend until smooth. The soup should be thin enough to slide through a straw 🥤, even though you won’t be eating this with a straw. It’s just something to keep in mind.

If the soup is too thick, you can add in chicken broth and blend until it’s the consistency you’re looking for.

Once the soup is thin enough, you’re done! Enjoy. 🥄
