ORZO PASTA SALAD WITH ROASTED PEPPERS

Orzo Pasta Salad
3 roasted red peppers
1/2 cup pitted olives (i did not use )
3 -4 cups cooked orzo pasta (2 cups dry)
1 cup cherry tomatoes
1/2 cup feta cheese
2 celery sticks or one big cucumber
1 cup chopped herbs ( basil, dill, cilantro, parsley ..anything you love and have in the house)

Dressing
1/2 cup olive oil
juice from 1 lemon
4 garlic cloves
1/4 small red onion or one shallot
salt/chili flakes to taste
chopped parsley to garnish
