Hearty & Cozy Chili Recipe
A simple, go-to chili that’s flavorful, filling, and perfect for a cozy meal!
Ingredients
For the Meat:
2 lbs ground beef
1 teaspoon Tony Chachere’s Creole seasoning
1 teaspoon black pepper
1 teaspoon Kinder’s caramelized onion butter seasoning
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon adobo seasoning
For the Veggies:
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1 medium onion, diced
1/2 teaspoon adobo seasoning
1/2 teaspoon chili powder
For the Chili Base:
1 large can (26-29 oz) tomato sauce
2 cans (14.5 oz each) Hunt’s fire-roasted diced tomatoes
2 cans (15 oz each) dark red kidney beans, drained
3 packs McCormick chili seasoning mix (preferably spicy & mild, but original works too)
3 oz tomato paste
3 oz water
For Serving:
Cooked buttered white jasmine rice
Triple cheddar cheese, shredded
Sour cream

Instructions
1. Cook the Ground Beef:
Heat a large pan over medium heat.
Add ground beef and season with Creole seasoning, black pepper, caramelized onion butter seasoning, garlic powder, chili powder, and adobo.
Cook until fully browned, breaking up the meat as it cooks. Drain excess grease if necessary.
2. Sauté the Peppers & Onions:
In a separate pan, add a little oil and sauté the red, green, and yellow bell peppers along with the onion.
Lightly season with adobo and chili powder.
Cook until softened (about 3-5 minutes), then transfer to the pan with the ground beef.
3. Build the Chili Base:
Stir in the tomato sauce, fire-roasted diced tomatoes, and dark red kidney beans.
Add McCormick chili seasoning packs and stir well to combine.
Let the chili simmer on low heat for about 20-30 minutes, allowing the flavors to meld.
4. Add the Final Touches:
Mix in tomato paste and water to thicken and balance the flavor.
Stir well and let simmer for another 10-15 minutes, covered.
5. Serve & Enjoy!
Serve the chili over buttered white jasmine rice.
Top with triple cheddar cheese and a dollop of sour cream.
