Chili Cornbread Casserole
1 Lb Ground Beef
9 Oz Beef Chorizo
1/2 Cup Beef Stock
1/2 tsp Taco Seasoning
3 Oz Ground Pork Rinds
3 Eggs
6 Oz Cooked Chicken
1 tsp Baking Powder
6 Tbsp Chicken Stock
1) Place the ground beef into a pan that’s set over medium high heat and allow to brown for about 5 minutes.
2) Once the beef is browned, drain most of the grease and keep the beef in the pan.
3) Once drained, add the chorizo and break it up into the ground beef and allow to cook for 3 minutes.
4) Add the beef stock and bring to a simmer. Lower the heat to medium and allow to simmer for 2 minutes or until slightly thickened.
5) Remove from the heat and mix in the taco seasoning. Set aside.
6 ) Add the Pork rinds, eggs, chicken, backing powder, and chicken stock to a food processor and process on low for about 2 minutes or until a uniform dough has formed.
7) Place the chili into a small oven-safe casserole dish and then top with the cornbread topping.
8) Place into an oven that’s set to 400F for 22 minutes or until golden brown. Let rest for 10 minutes before serving.
Pizza Puffs
1 1/2 oz Pork Rinds, Ground
2 Eggs
36 Pepperonis
6 Oz Low Moisture Mozzarella, Shredded
1/2 tsp Italian Seasoning (For sprinkling on top)
1) Add the pork rinds and eggs to a mixing bowl and mix to combine. Let rest for 5 minutes.
2) Place 1-2 Tbsp of the mixture to a muffin tin and spread evenly.
3) Layer the pepperoni and the mozzarella until all ingredients have been used. Top each one with the italian seasoning.
4) Place into the oven at 350F for 17 minutes or until the cheese is golden brown
Bone Marrow
3 Cups Cold Water
1 Tbsp Salt
1 Lb Split Marrow Bones
1) Combine the salt and cold water together until the salt is dissolved. Place the bone marrow into this solution and allow to brine for 6-24 hours.
2) Remove from the brine and place onto a foil lined cookies sheet. Cook in a 400F oven for 20 minutes.

That looks yummy! Anyway, here's a simple chocolate brownie recipe for you to enjoy:
Ingredients:
– 1 cup (200g) granulated sugar
– 1/2 cup (115g) unsalted butter, melted
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/3 cup (40g) unsweetened cocoa powder
– 1/2 cup (65g) all-purpose flour
– 1/4 teaspoon salt
– 1/4 teaspoon baking powder
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour in an 8-inch square baking pan.
In a large mixing bowl, combine the melted butter and sugar. Stir until well combined.
Beat in the eggs, one at a time, then stir in the vanilla extract.
Add the cocoa powder, flour, salt, and baking powder to the mixture. Stir until just combined. Be careful not to overmix.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).
Allow the brownies to cool in the pan before slicing and serving.

I've heard the chili-cornbread casserole called tamale pie but we call it Johnny-cake casserole.

$1000 🤣 From August last year my 3 little cluckers didn’t lay any eggs and I threatened them they’d go in the pot if they didn’t sort themselves out! The started laying 2 weeks ago so now I’m getting average of 2 eggs a day, yippee! I live in the uk and at the moment avian flu is only in a few areas.

Holy cow (punintentional)! The tamale/chili corn bread casserole was SO good! I will never make troublesome keto chili again with 85 million random ingredients again. The chorizo was just mind blowing/totally genius!!!! And that cornbread crust recipe. So clean and just so tasty. Can wait to make the pizza puffs next. Do you know how many servings these recipes make? Sorry if I missed that info. Ty for all you do!!!

I just wrote my brother about your deep dish pizza and how the crust was like a chewy, denser, moister cornbread. That pork rind creation is a definite winner. I'm gonna try this recipe too – it'll be my third one of yours, all of them good. Keep 'em comin'. I wasn't planning to stay on a strict carni-diet after I lose the weight (19 lbs. to go!) but if we keep coming up with good recipes, who knows!
