Ingredients (सामग्री) :

Green Chilli Sauce (हरी मिर्च सॉस):

250 gm Dark Green Chillies (गहरी हरी मिर्च)
1 tbsp Oil (तेल)
1 tsp Jeera (जीरा)
1 Onion, Chopped (प्याज – कटा हुआ)
12-14 Garlic Cloves (लहसुन की कलियां)
1 inch Ginger, Chopped (अदरक – कटा हुआ)
1½ tsp Salt (नमक)
3 tbsp Sugar (चीनी)
1 Cup Water (पानी)
½ Cup Vinegar (सिरका)

Method Homemade Green Chili Sauce Recipe:

Step 1: Prepare the Ingredients
Wash two types of chilies thoroughly and keep them ready.

Step 2: Cook the Base
Heat oil in a pan and add cumin seeds.
Add chopped onion, garlic, and ginger, and sauté until fragrant.
Pour in some water and let it cook for a while.
Add the washed chilies and salt, then cook until softened.

Step 3: Blend & Strain
Turn off the heat and add sugar & vinegar, mixing well.
Blend the mixture into a smooth paste.
Strain the sauce to remove any coarse particles.

Step 4: Store & Shelf Life
Pour the sauce into a sterilized airtight bottle.
Shelf life: Stays fresh for 1 month when stored in the refrigerator.

2) Red Chilli Sauce (लाल मिर्च सॉस):

250 gm Fresh Red Chillies (ताज़ी लाल मिर्च)
1 tbsp Oil (तेल)
½ tsp Jeera (जीरा)
1 inch Ginger (अदरक)
20 Garlic Cloves (लहसुन की कलियां)
1 tbsp Rock Salt / Regular Salt / Sendha Namak (सेंधा नमक / साधारण नमक)
½ Cup Water (पानी)
3 tbsp Sugar (चीनी) (मिर्च की तीव्रता के अनुसार)
¼ Cup Vinegar (सिरका)

Method Homemade Red Chili Sauce :

Step 1: Prepare the Chilies
Wash red chilies properly and cut them into pieces.

Step 2: Cook the Ingredients
Heat oil in a pan and add cumin seeds, ginger, and garlic. Sauté until fragrant.
Add sendha namak (rock salt) and water, then cook for a few minutes until softened.

Step 3: Blend & Strain
Turn off the heat and mix in sugar & vinegar.
Blend the mixture into a smooth paste.
