Our Family Crock Pot Chili w/out Beans
Recipe:
Perfect for Winter & Cold Snaps
.
It’s a great way to use up pantry staples & tomatoes & peppers or onions from the garden that were in the freezer.
.
You need a few hours for this to simmer on the stove top or crockpot on low.
.
Sometimes I make a few substitutions depending on meat on hand or on sale
.
You can use as little as 2lbs & up to what this recipe calls for 4lbs of meat
.
I usually use 3lbs ground beef
If I use 2lbs I just add extra mushrooms to thicken it up.
.
I serve it plain with sour cream & shredded cheese π§ & or sliced olives & avocado π₯ on top. Pour over mashed or baked potato π₯ or plain rice to stretch it out or just just because it’s comforting & yummy.
.
2lbs round steak cut up
or 90/10 hamburg with ground chili meat in photos.
1lb lean ground pork
(hubby & i like all beef)
.
3 tbsp butter
3 medium onions peeled chopped
.
4 1/2 tbsp chili powder
4 cloves fresh garlic
– or as much garlic as you like (6-8)
1 tbsp flour your choice
(rice flour or einkorn is what we use)
1 tbsp worcestershire sauce
(I use red boat fish sauce so it’s soy free)
1-2 tsp sea salt
1-2 tsp ground black pepper
1 tbsp Oregano
3 Bay Leaves
1 tbsp Sage (I use Poultry Seasoning)
2 tsp beef boulion your choice
1 tbsp Cumin (I use 2 tbsp)
1 tbsp red wine vinegar
1 tbsp brown sugar
.
4oz can Pepperochini peppers πΆ
I omit this since prices went up & just use 2 Bell Peppers πΆ chopped
Add a pinch of cayenne pepper to add that kick
2- 28oz can of diced tomatoes π
(I had se frozen tomatoes from the garden I added as well β€οΈ
1 can tomato paste π
.
1 small package of crimini mushrooms or white mushrooms sliced π
.
To start gather all ingredients
.
Start:
SautΓ©ing all you diced or ground beef in some butter or bacon fat with sea salt and black pepper & do not drain the fat. Add the fat to your chili
.
Sauce:
In a separate pot saute onions π° & bell peppers πΆ in butter until onions are translucent.
Add:
Canned tomatoes & tomato paste π
Add:
All spices & flour
Add:
Pepperocini peppers if not add your pinch of cayenne pepper
.
Heat until bubbly on medium heat
Add:
Mushrooms π
Browned beef/meat
.
Stir all together and place on low heat with a cover for 2- 3 hours stirring and checking on it βοΈ π
Or put sauce & sauted meat into crockpot cover on low for several hours π π π π π π π π π π π π
.
Enjoy with or with out Topping or poured over rice, mashed potato or baked potato π₯ π
.
