The Goofy Blonde Chef Presents: High Protein Low Carb Chili



This chili recipe makes use of the ubiquitous Instant Pot, but you don’t need one in order to make it. You can simply simmer it on the stove in a deep saucepot.

Protein Kick Low Carb Chili

1 lb extra lean ground beef
1 can black soybeans
1 can tomatoes with green chilies (like Rotel)
1 sweet onion chopped
1 cup sliced mushrooms
1 cup diced zucchini
Chili seasoning mix (see below)

Brown beef in a deep pot, or instant pot. Add onion and sauté for about 5 minutes. Add remaining ingredients. If using Instant Pot set to meat/stew and let pressure release when done. If using stovetop, bring to a boil, then cover and simmer in low heat for 1 hour.

Taste and adjust for seasonings. Serve hot in bowls, over chips for nachos, or rolled into a low carb tortilla for burritos. Garnish with cheese, salsa, lettuce, white onion or whatever you desire.

Chili Seasoning Mix
* 2 1/2 Tbsp chili powder
* 1 1/4 Tbsp ground cumin
* 1 1/2 tsp salt
* 1/2 tsp garlic powder
* 1/2 tsp onion powder
* 1/2 tsp black pepper
* 1/8 tsp cayenne (leave out if you want no spicy kick at all)
