Brinjal fry is a delicious and crispy dish made with brinjal (eggplant), spices, and a little oil. Here’s a simple recipe to make it at home:

Ingredients:

2 medium brinjals (eggplants) – sliced into thin rounds

½ tsp turmeric powder

1 tsp red chili powder

½ tsp garam masala

½ tsp coriander powder

2 tbsp oil (for shallow frying)

Instructions:

1. Prepare the brinjal: Wash and slice the brinjals into thin rounds. Sprinkle a little salt over them and let them sit for 5 minutes to remove excess moisture. Pat dry with a paper towel.

2. Make the spice mix: In a bowl, turmeric powder, red chili powder, garam masala, coriander powder, and salt.

3. Coat the brinjal: Toss the brinjal slices in the spice mix until evenly coated.

4. Fry the brinjal: Heat oil in a pan and place the coated brinjal slices in a single layer. Cook on medium heat for 3-4 minutes per side until golden brown and crispy.

5. Serve hot: Garnish with curd and serve hot with rice, dal, or roti.
