2 tsp ground cumin
1 tsp smoked paprika (optional)

1 tsp ancho chili powder (adds depth of flavor)
1 tbsp brown sugar (for sweetness, optional)

Optional Garnishes:
Shredded cheddar cheese
Sour cream or Greek yogurt
Diced green onions or fresh cilantro
Sliced jalapeƱos

Instructions:

SautƩ Aromatics:
In a large Dutch oven or pot, heat olive oil over medium heat. Add diced onions and sautƩ for 5-7 minutes until soft and translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.

Brown the Meat:
Add the ground beef (or pork) to the pot. Cook for 7-8 minutes, breaking up the meat with a wooden spoon until browned. Drain excess fat if necessary.

Add Tomato and Seasonings:
Stir in tomato paste, crushed tomatoes (or fresh peeled and crushed tomatoes), Worcestershire sauce, chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Cook for 2-3 minutes to allow the flavors to blend.

Simmer:
Pour in the beef broth and water. Stir to combine. Bring the chili to a simmer, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally. For deeper flavor, let it simmer for 1-2 hours, adding more water if needed.

Add Beans (Optional):
If using beans, stir in the cooked or canned kidney and black beans. Simmer uncovered for another 20-30 minutes until the chili thickens to your desired consistency.

Season and Serve:
Taste the chili and adjust the seasoning with salt, pepper, or spices as needed. Serve hot, garnished with cheddar cheese, sour cream, green onions, or sliced jalapeƱos.

Variations:

Spice Adjustments:
For milder chili, reduce or omit cayenne.
For spicier chili, add more cayenne or fresh peppers like jalapeƱo.
Add cinnamon for warmth or ancho chili powder for smokiness.

Bean Options:
Use pinto beans instead of black for a traditional taste.
Mix in garbanzo or white beans for variety.
For a beanless version, focus on meat and spices only.

Complementary Foods:
Side Dishes:
Cornbread: A sweet, soft addition; serve warm with butter or honey.
Rice: Fluffy rice soaks up the chili sauce and adds texture.
Baked Potatoes: Crispy potatoes can be served as a side or topped with chili.
Tortilla Chips: Great for scooping, or serve warm corn tortillas for wrapping.

Non-Alcoholic Beverages:
Iced Tea: Refreshing, cuts the richness of the chili.
Sparkling Water: Light water with lemon or lime complements spice.
Lemonade: Sweet-tart lemonade cools the heat.

Table Service Suggestions:
Bowls: Use wide bowls for even topping distribution.
Small Plates: Serve warm plates for sides.
Condiment Station: Set up toppings like cheese, sour cream, and jalapeƱos for customization.
Spoons & Napkins: Provide sturdy spoons and extra napkins for easy serving.

History of Chili:
Chili con carne, meaning ā€œchili with meat,ā€ likely began in 1800s Texas, combining dried beef, suet, and chili peppers for portability. Over time, tomatoes, beans, and spices were added, creating a Tex-Mex staple celebrated nationwide, often sparking debates over ingredients and regional variations.
