HOW TO MAKE SWEET AND SOUR CHICKEN, A QUICK AND EASY DINNER!
Sweet and sour chicken
470g Chicken Breast
CHICKEN SEASONING
1/4 tsp Black pepper
1/2 tsp Chili powder
1 tsp Corn starch
1/2 tsp Garlic powder
1 egg
1/4 tsp salt
SAUCE
300g water
2 tbsp Rice vinegar
2 tbsp Ketchup
1 tbsp Soy sauce
1/4 tsp Chili flakes
1/4 tsp Black pepper
1 tsp Corn starch
1/2 tsp Paprika
3 tsp Brown sugar (ADJUST TO YOUR TASTE)
CORN STARCH MIXTURE
120g Corn Starch
3/4 tsp Garlic powder
3/4 tsp Black Pepper
3/4 tsp Paprika
1/2 of a Medium red bell pepper
1/2 of a Medium green pepper
2 Shallots onion
1 big Clove of garlic (grated)
1/2 tsp Ginger (grated)
2 tbsp cooking oil
Oil for deep frying
-Cover the chicken with cling wrap and tenderize it by hitting it with a meat hammer, after that cut into small pieces, thereafter season it with, 1/4 tsp black pepper, chili powder, 1 tsp corn starch, 1/2 tsp garlic powder, the egg, mix then add salt and mix again, let it rest for 10 minutes!
-In the meantime, make a sauce by putting together water, rice vinegar, ketchup, soy sauce, chili flakes, 1/4 tsp black pepper, corn starch, mix ,add brown sugar followed by 1/2 tsp paprika mix well and keep aside!
-In a big plate put 120g corn starch, 3/4 tsp paprika and 3/4 tsp black pepper mix well, coat the chicken with the mixture.
-Pour enough oil in a large pan to deep fry the chicken, heat on medium until hot, fry in batches,
Fry the chicken For 7 minutes remove them from the pan put on a plate which is lined with a kitchen paper towel, after all the chicken has been fried for the first round, fry it again for the second time for 2 minutes to get a crisp texture, in batches. Remove from the pan put on a lined plate.
-In a clean pan put 2 tablespoon of oil, heat on medium until hot, add the pepper, onion, garlic, and ginger, fry for 4 minutes there after add the sauce cook until it reduces in size, then add the chicken cook for 3 minutes, turn off the heat serve with rice, enjoy.
