Wild West Chili Recipe
Ingredients
2 lbs ground beef
2 cups white or yellow onion, chopped
2 tablespoons tomato paste
3 tablespoons chili powder
2 tablespoons ancho chili powder
1 teaspoon cumin
1 teaspoon dried oregano
2 teaspoons garlic powder
2 teaspoons salt
½ teaspoon smoked paprika
2 tablespoons masa harina (adds flavor and thickens)
2 (14.5oz) cans diced tomatoes
4 cups beef broth (We use Kettle & Fire Beef Broth)
4-5 cups cooked pinto beans

Directions
Prepare the Beans
Measure 2 cups of dried pinto beans, rinse, and cover with 4 cups of water. Soak for 3 hours, then drain and rinse.
Stovetop: Cook soaked beans in a pot with 6 cups fresh water and 1 teaspoon salt. Simmer for 1.5-2 hours until tender. Drain and set aside.
Instant Pot: Add soaked beans, 6 cups fresh water, and 1 teaspoon salt to the Instant Pot. Cook on High Pressure for 30 minutes, natural release for 30 minutes. Drain and set aside.
Cook the Chili
Brown the Beef: In a large pot, add ground beef and cook over medium-high heat until browned, about 8-10 minutes.
Add Onion: Stir in chopped onion and cook until softened, about 2-4 minutes.
Add Spices and Tomato Paste: Stir in tomato paste, chili powders, cumin, oregano, garlic powder, 2 teaspoons salt, smoked paprika, and masa harina. Cook for 1 minute to bloom flavors.
Add Tomatoes and Beef Broth: Pour in diced tomatoes and beef broth, stir everything together.
Cover and Simmer: Cover and simmer on low for 25 minutes, stirring occasionally.
Let Sit and Serve: Remove from heat, let sit for 10 minutes, then serve.

This Wild West Chili is the chili you’ll crave all year long! Make a big batch and enjoy as-is or over nachos, in burritos, or on baked potatoes for a twist. It’s a true crowd-pleaser!

  1. Makes no sense that you only simmer for 25 minutes. I simmered mine for 2 hours lid off. Then add the beans in the end.
