1 tsp turmeric
100g Greek yogurt
Salt and pepper to taste

→ Mix ingredients and marinate the beef in the fridge for at least 1 hour (or overnight for extra flavor).

Tomatoes:
3-4 medium tomatoes

→ Score the skin with an “X”, boil briefly, peel, remove seeds and excess liquid. Chop finely.

Caramelized Onion:
1 large onion (sliced)
1–2 tbsp oil

→ Cook on medium heat until soft, then lower to caramelize until golden brown.

Roux:
60g fat (lard or bacon grease)
60g all-purpose flour
2–3 tbsp curry powder
1 tbsp garam masala

→ Melt fat, stir in flour, cook until light brown. Add spices, stir well, remove from heat.

Curry Base:
3–4 potatoes (peeled & cubed)
2–3 carrots (sliced)
500ml chicken stock (or water + 1 stock cube)
Tomatoes (prepared earlier)
Caramelized onions
Marinated beef
½ grated apple
Salt & pepper to taste

→ In a pot, cover potatoes and carrots with water. Bring to a boil, then add chicken stock, beef, tomatoes, onions, grated apple, and roux. Simmer on medium-low heat until beef is tender (around 1–1.5 hours). Skim foam/fat.

Serve on a plate with freshly cooked white rice. Bon Appétit!
