No-Cook Sweet Pepper Mexican Beans and Rice! Powering my speed record attempt of the Ozark Trail!



I will eat this no-cook dinner as I go for the unsupported Ozark Trail “fastest known time”.

30-60 minutes of soaking makes it moist and yummy. Since it’s dehydrated, it weighs just 1/4 lb (120g). Keeping the weight I’m carrying to a minimum will help me walk faster and farther.

The final prep for this trip is getting me nervous! My goal is to hike close to 60 miles per day for 4 days, which is 20 hours of hiking at 3 mph. The weather has to cooperate, my body has to cooperate, and my mind has to cooperate. Let’s go!

  1. honest question, have you ever tried a high fat diet while on the road? i would guess it would be good because of the higher amount of kcal and no blood spikes?

  2. We got your book for a birthday present, dehydrated some beans for cold soaking and veggies for deluxe ramen, and took our kids on a 2 night backpacking trip to Pine Mtn GA. It was awesome! Thanks for the inspiration and giving us the confidence to do it.

  3. Whats the difference between buying beans that are already dried? Genuine question 🤔 is hydrating them again faster this way?

  4. Looks great I gotta give it a try! This would do good in a freeze dryer too but i like that you still dehydrate every so often!

  5. It maybe too much heat for you guys but you can try ghost chill and chicken cut one small piece make according to you tolerance.
    In my state where the ghost chill or bhout jolokiya is originally from we eat it with day old soak rice in water, with roasted pork ghost chills and onion .
    Helps with digestion and increased good bacteria you guys can try if you want.
    But I love your content keep it us guys

  6. You guys have that freeze dryer, why didnt you use that? It would make it even lighter and would rehydrate so much faster.
